Below is a sampling of the recipes that often appear at our breakfast table!

Alabama Wild Shrimp Quiche Lorraine
As featured on FOX 6's "Good Day Alabama"

Pastry for 1 9: 1-crust pie
6 slices bacon, chopped and sauteed
1/4 cup onion, sauteed
1/2 cup Alabama Wild Shrimp, cooked and chopped if large
1/4 cup shredded Swiss cheese
1 Tbs. Parmesan cheese
1/4 tsp. baking powder
1 tsp. all-purpose flour
1 3/4 c. sour cream
1 tsp. chopped fresh basil
4 eggs
Bake the pie shell in a 400 degree oven for 20 minutes. In the baked pie shell place in layers the bacon, onion, shrimp, and cheeses. In a mixing bowl combine the baking powder, flour, sour cream, basil, and eggs. Bear the mixture well and pour over the layers in the pie shell. Bake in a 400 degree oven for 40 minutes. Cover the edges if they start to brown too quickly. Garnish with additional basil and serve.

Country Breakfast Skillet
Serves 4 to 6

6 slices bacon, cut in 2" pieces
1/4 cup chopped green pepper
2 Tbs. finely chopped onion
6 cups cubed cooked potatoes
1/2 cup shredded sharp Cheddar cheese
6 eggs, lightly beaten
Salt and Pepper to taste
In a large heavy skillet, cook bacon over moderate heat until crisp. Remove and drain. Pour off all but about 3 Tbs. of bacon drippings. Heat drippings in the pan until sizzling. Add the green pepper, onion, and potatoes; cook, stirring gently, until the potatoes are browned. Sprinkle on the shredded cheese and stir until melted. Add the eggs and cook, stirring gently, until eggs are set. Season with salt and pepper. Sprinkle on the crumbled bacon and serve at once.


Breakfast Potatoes
Serves 4

4-6 medium red potatoes
1 small red onion
1 green pepper
1 red pepper
1/4 cup butter
2 Tbs. vegetable oil
Wash potatoes; slice and quarter. Slice and quarter onion and peppers. In large skillet, heat oil on medium heat. add potatoes, cover and cook for 20 minutes, stirring occasionally. add onions, peppers, and butter; season if desired.
